What’s in a Fudgesicle?
A fudgesicle is a creamy, chocolaty frozen treat on a stick. It is similar to a popsicle or chocolate ice cream but with a rich, fudgy, chewy, melty texture. It should not be icy or watery. If it is, it has been made with some inferior product like skim milk or water. Blah.
Fudgesicles are best when made with lots of healthy fats from real milk and cream, egg yolks, and butter. They should be sweet but not overly so, as their fudgy chocolate flavor is the real star of the show.

Hi! Holy wow, if only I had access to the fudgsicles in my childhood! Now I can make them for my little ones (and with butter? Incredible). Is there an alternative to using cornstarch? Would tapioca flour or something non-corn related work instead?

You can omit the cornstarch. The eggs will thicken the mixture but you might want to do the cooking on a double boiler so it can go a little slower and more gentle.

Made these a couple days ago with a couple changes, used yolks from duck eggs and regular sugar, less than the amount called for. I also didn’t do the chocolate shell. Finally got to try one. These are hands down, the creamiest, chocolatey fudge sickles I’ve had in years. I stopped buying them over 20 years ago. Thank you for sharing this recipe!!!! I will be making frequently! And the stainless steel molds are perfect!

this is not a real fudgesicle, it's a popsicle. Real fudgesicles are more ice cream like, full fat and damn delicious.

Hey Mike,
Thanks for your feedback but I think you might have missed the part of the recipe that calls for Whole Milk, Egg Yolks, and Pastured Butter. I don't know what could be more full fat than that? You could, I suppose, substitute heavy cream if you wanted more even more fat but I can't vouch for how they will freeze up. It would be nice if you actually tried the recipe first before leaving a disparaging comment.
