Creamy Coconut Cauliflower Curry Soup

A perfectly easy, dairy-free, keto-friendly soup made with seven ingredients in under 30 minutes!

Ingredients

Instructions

  1. Heat the oil in a large soup pan.
  2. Dice the onion and sauté it in the oil until translucent.
  3. Add the curry powder and stir it in with the onion.
  4. Add the chicken stock and bring the pot to a slow boil.
  5. Wash the cauliflower and break it into small pieces. Add them to the pot and simmer until tender.
  6. Add the coconut milk and salt.
  7. Use a handheld blender to puree the soup smooth.

Notes

I used coconut yogurt and a few pieces of curry roasted cauliflower for the garnish.

This was delicious! I had to improvise a bit. I only had about a 1/4 tsp of curry powder so I threw that in and then added a heaping tablespoon of Thai green curry paste. It worked fine, in fact I added another tsp later. I did cut the salt to 3/4 tsp because I have hypertension. It's a lovely easy recipe, thank you so much.

Absolutely! You can freeze it and just thaw and reheat it when you are ready to have it again. I've been told I cook for an army. It's the truth. :)

Yes, absolutely, riced cauliflower will work just fine! I would say about 5-6 cups would be adequate. Hope you enjoy it!
